Dressing
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon Dijon mustard (Whole30 compliant)
- ½ teaspoon chipotle powder

Instructions
- Cook the Beef: Heat olive oil in a skillet over medium heat. Add the ground beef and season with chipotle chili powder, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook, stirring occasionally, until the beef is browned and cooked through, about 8-10 minutes.
- Sauté Cauliflower Rice: In the same or a separate skillet, sauté the cauliflower rice for 5-6 minutes over medium heat until tender but not mushy, stirring occasionally to prevent sticking.
- Prepare the Dressing: In a small bowl, whisk together olive oil, lime juice, Dijon mustard, chipotle powder, salt, and pepper until emulsified and smooth.
- Assemble Bowls: Divide the cooked cauliflower rice evenly among four serving bowls. Top each bowl with a portion of the seasoned ground beef, followed by sliced avocado, cherry tomatoes, diced cucumber, and shredded romaine lettuce.
