Instructions
- Blend Ingredients: Combine the watermelon, granulated sugar or honey, fresh lime juice, mint leaves, and a pinch of salt in a blender. Blend until the mixture is completely smooth to ensure an even texture.
- Strain Mixture: For an ultra-smooth result, pour the blended mixture through a fine-mesh sieve to remove any pulp or solids, though this step is optional based on texture preference.
- Freeze Initial: Pour the smooth watermelon mixture into a shallow freezer-safe dish. Place it in the freezer for 1 hour to start the freezing process.
- Scrape Ice Crystals: After 1 hour, remove the dish from the freezer and use a fork to scrape the frozen edges, breaking up ice crystals and mixing them back into the mixture to encourage a fluffy texture.
- Repeat Freezing and Scraping: Continue freezing the mixture for 3 to 4 more hours, scraping every 30 minutes. This creates the characteristic fluffy, granular ice crystals of granita.
- Serve: Once the granita has formed light and fluffy ice crystals, spoon it into chilled glasses. Garnish with fresh mint leaves before serving for a fresh look and added aroma.
