Description

This Watermelon Mint Granita is a light and refreshing frozen dessert made with juicy watermelon, fresh mint, and a splash of lime. Its icy, flaky texture provides a perfect cooling treat on hot summer days, combining natural sweetness with a hint of citrus and herbal freshness.

Ingredients

Granita Ingredients

  • 6 cups seedless watermelon, cubed
  • ¼ cup granulated sugar or honey
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh mint leaves
  • Pinch of salt

Instructions

  1. Blend Ingredients: Combine the watermelon, granulated sugar or honey, fresh lime juice, mint leaves, and a pinch of salt in a blender. Blend until the mixture is completely smooth to ensure an even texture.
  2. Strain Mixture: For an ultra-smooth result, pour the blended mixture through a fine-mesh sieve to remove any pulp or solids, though this step is optional based on texture preference.
  3. Freeze Initial: Pour the smooth watermelon mixture into a shallow freezer-safe dish. Place it in the freezer for 1 hour to start the freezing process.
  4. Scrape Ice Crystals: After 1 hour, remove the dish from the freezer and use a fork to scrape the frozen edges, breaking up ice crystals and mixing them back into the mixture to encourage a fluffy texture.
  5. Repeat Freezing and Scraping: Continue freezing the mixture for 3 to 4 more hours, scraping every 30 minutes. This creates the characteristic fluffy, granular ice crystals of granita.
  6. Serve: Once the granita has formed light and fluffy ice crystals, spoon it into chilled glasses. Garnish with fresh mint leaves before serving for a fresh look and added aroma.

Notes

  • Use very ripe watermelon for the sweetest and juiciest flavor.
  • Store leftovers in an airtight container in the freezer and fluff again with a fork before serving to restore texture.
  • For a lighter texture, add a splash of sparkling water just before serving.
