Description

All the flavor of walking tacos baked into one cheesy, family-friendly casserole. This easy recipe layers seasoned ground beef, tangy salsa, crispy corn chips, and melted cheddar cheese for a satisfying Tex-Mex dish that’s perfect for weeknight dinners or potlucks.

Ingredients

Main Ingredients

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 2 cups crushed corn chips (Fritos or Doritos)

Toppings

  • ½ cup sour cream
  • ½ cup diced tomatoes
  • 2 green onions, sliced

Instructions

  1. Preheat the oven: Set your oven temperature to 350 °F (175 °C) to prepare for baking the casserole.
  2. Cook the meat: In a skillet over medium heat, brown the ground beef or turkey thoroughly. Once cooked, drain excess fat to reduce greasiness, then stir in the taco seasoning and salsa until well combined.
  3. Assemble in baking dish: Lightly grease your baking dish with cooking spray or butter. Spread the seasoned meat mixture evenly across the bottom of the dish.
  4. Add cheese and chips: Sprinkle the shredded cheddar cheese evenly over the meat layer, then top with the crushed corn chips to add a crunchy texture.
  5. Bake: Place the casserole in the oven and bake for 15 minutes, or until the casserole is bubbly and the cheese has melted completely.
  6. Garnish and serve: Remove from oven and let cool slightly. Serve individual portions topped with a dollop of sour cream, fresh diced tomatoes, and sliced green onions for added freshness and flavor.

Notes

  • For extra volume and nutrition, add black beans or corn to the meat mixture before baking.
  • This casserole works great as a make-ahead meal; prepare it in advance and refrigerate until ready to bake.
  • Use gluten-free corn chips to keep this dish gluten free.
  • Ground turkey is a leaner alternative to beef for a lower-fat option.
