Ingredients
Potatoes and Seasoning
- 2 lbs baby potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper, to taste
Dressing
- ½ cup Greek yogurt
- ¼ cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 2 tbsp chopped dill
- 2 tbsp chopped parsley
- 2 green onions, sliced
- 2 celery stalks, diced
- 2 dill pickles, chopped
Instructions
- Preheat and Prepare Potatoes: Preheat your oven to 425°F (220°C). Boil the baby potatoes in salted water for 12–15 minutes until they are fork-tender but still hold their shape.
- Smash Potatoes: Drain the potatoes and gently smash each one with the bottom of a glass or a potato masher, being careful not to break them apart completely.
- Season and Roast: Arrange the smashed potatoes on a baking sheet. Drizzle with olive oil and sprinkle garlic powder, paprika, salt, and pepper evenly over them. Roast in the preheated oven for 35–40 minutes until the potatoes are golden and crispy on the edges.
- Prepare Dressing: While the potatoes roast, mix together Greek yogurt, mayonnaise, Dijon mustard, lemon juice, chopped dill, parsley, diced celery, chopped dill pickles, and sliced green onions in a large bowl until well combined.
- Toss and Garnish: When the potatoes are done roasting, remove them from the oven and toss them gently with the prepared dressing while still warm. Garnish with additional fresh herbs if desired before serving.
