This Viral Crispy Potato Salad features tender baby potatoes that are boiled, smashed, and then roasted to crispy perfection. Combined with a creamy herb dressing made from Greek yogurt, mayonnaise, fresh dill, parsley, and crunchy vegetables like celery, green onions, and dill pickles, this salad offers a delightful contrast of textures and flavors. Ingredients
Potatoes
- 2 lbs baby potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper, to taste
Dressing
- ½ cup Greek yogurt
- ¼ cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 2 tbsp chopped dill
- 2 tbsp chopped parsley
- 2 green onions, sliced
- 2 celery stalks, diced
- 2 dill pickles, chopped
Instructions
- Preheat the oven. Set your oven to 425°F (220°C) to get it ready for roasting the potatoes later.
- Boil the potatoes. Place the baby potatoes into a pot of boiling water and cook for 12 to 15 minutes, until they are fork tender but not falling apart.
- Slam the potatoes. Carefully drain the potatoes and then gently smash each one to flatten slightly, allowing more surface area to crisp up.
- Season and oil. Drizzle the smashed potatoes with olive oil and sprinkle them evenly with garlic powder, paprika, salt, and pepper to infuse flavor.
- Roast the potatoes. Spread the potatoes out on a baking sheet in a single layer and roast them in the preheated oven for 35 to 40 minutes until they are crispy and golden brown on the edges.
- Prepare the dressing. In a mixing bowl, combine Greek yogurt, mayonnaise, Dijon mustard, lemon juice, chopped dill, chopped parsley, diced celery, chopped dill pickles, and sliced green onions. Stir well to create a creamy herb dressing.
- Toss the salad. While the potatoes are still warm, toss them gently with the herb dressing to coat evenly.
- Garnish and serve. Add extra fresh herbs on top for garnish and serve the salad warm or chilled as desired.
