Description

A light and nourishing vegan congee featuring crisp lettuce and simple seasonings, perfect for a gentle and refreshing meal. This easy-to-make rice porridge blends soft, creamy rice with fresh greens for a wholesome and comforting dish that suits any time of day.

Ingredients

Main Ingredients

  • 1/2 cup rice
  • 6 cups water or vegetable broth
  • 1 cup lettuce, chopped
  • 1 tsp sesame oil
  • Salt to taste
  • 1 tsp soy sauce (optional)
  • Green onions for garnish

Instructions

  1. Prepare the rice: Rinse the rice thoroughly under cold water to remove excess starch. Then, combine the rinsed rice with 6 cups of water or vegetable broth in a large pot.
  2. Cook the rice: Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer gently. Cook until the rice softens and the mixture becomes creamy, about 30-35 minutes, stirring occasionally to prevent sticking.
  3. Add the lettuce: Stir in the chopped lettuce and cook briefly for 2-3 minutes until the lettuce is just wilted but still retains some freshness and texture.
  4. Season the congee: Add 1 teaspoon of sesame oil, soy sauce if using, and salt to taste. Stir well to combine all the flavors.
  5. Simmer and serve: Allow the congee to simmer for an additional 2-3 minutes to meld the flavors. Ladle into bowls and garnish with chopped green onions. Serve hot for a comforting meal.

Notes

  • Add tofu cubes for extra protein and texture.
  • Do not overcook the lettuce to maintain its fresh green color and crispness.
  • Feel free to substitute lettuce with other greens like spinach or bok choy for variety.
