Description

A fresh and protein-rich tuna salad featuring creamy avocado, crisp cucumber, and juicy cherry tomatoes tossed in a bright lemon dressing. This no-cook, quick, and healthy salad is perfect for a light lunch, dinner, or easy meal prep, offering vibrant Mediterranean flavors with a nutritious boost.

Ingredients

Main Salad Ingredients

  • 2 cans tuna in water, drained
  • 1 large avocado, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ small red onion, finely sliced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh cilantro, chopped (optional)
  • 2 tbsp pumpkin seeds or sunflower seeds (optional)

Dressing

  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Drain the Tuna: Drain the tuna thoroughly to remove excess water, then place the tuna into a large mixing bowl.
  2. Add Vegetables and Herbs: Add diced avocado, diced cucumber, halved cherry tomatoes, finely sliced red onion, chopped fresh parsley, and if using, chopped fresh cilantro to the bowl with tuna.
  3. Make the Dressing: In a small bowl, whisk together olive oil, fresh lemon juice, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper until well combined.
  4. Combine Salad and Dressing: Pour the prepared dressing over the tuna and vegetable mixture in the large bowl.
  5. Toss Gently: Carefully toss all ingredients together, taking care not to mash the avocado, ensuring an even coating of dressing throughout the salad.
  6. Add Seeds and Serve: Sprinkle pumpkin or sunflower seeds over the top if desired, and serve the salad immediately for best freshness and texture.

Notes

  • Add boiled eggs for extra protein and heartiness.
  • For a creamier texture, mix the tuna with 1–2 tablespoons of Greek yogurt before adding the vegetables.
  • Include lettuce or mixed greens to make the salad more filling and add extra crunch.
  • If preparing ahead, add the avocado just before serving to prevent browning and maintain freshness.
