Ingredients
Main Ingredients
- 2 ripe mangoes, peeled and chopped
- 1 cup full-fat coconut milk
- 2 tablespoons honey or maple syrup
- 1 tablespoon fresh lime juice
- 1 teaspoon vanilla extract (optional)
- Pinch of salt
Instructions
- Prepare the Ingredients: Peel and chop the ripe mangoes into chunks to ensure easy blending and a smooth texture for your popsicles.
- Combine in Blender: Add the chopped mangoes, full-fat coconut milk, honey or maple syrup, fresh lime juice, vanilla extract if using, and a pinch of salt into a blender.
- Blend Until Smooth: Blend all ingredients together until the mixture is completely smooth and creamy without any lumps.
- Pour into Molds: Evenly pour the blended mixture into popsicle molds, filling each mold to the top for full-sized popsicles.
- Insert Sticks and Freeze: Insert popsicle sticks into each mold and place them in the freezer. Freeze for at least 6 hours or overnight to ensure they are fully frozen.
- Remove and Serve: To release the popsicles from the molds, briefly run the outside of the molds under warm water for a few seconds and gently pull out the popsicles. Enjoy immediately or keep them stored in the freezer.
Notes
- Add shredded coconut or diced kiwi into the mixture or on top before freezing for extra texture and flavor.
- Use very ripe mangoes for the sweetest and most flavorful popsicles.
- Store popsicles in an airtight container or wrapped individually in the freezer for up to 1 month to maintain freshness.
