  • 1 cup full-fat coconut milk
  • 2 tablespoons honey or maple syrup

Instructions

  1. Prepare the Ingredients: Peel and chop the ripe mangoes into chunks to ensure easy blending and a smooth texture for your popsicles.
  2. Combine in Blender: Add the chopped mangoes, full-fat coconut milk, honey or maple syrup, fresh lime juice, vanilla extract if using, and a pinch of salt into a blender.
  3. Blend Until Smooth: Blend all ingredients together until the mixture is completely smooth and creamy without any lumps.
  4. Pour into Molds: Evenly pour the blended mixture into popsicle molds, filling each mold to the top for full-sized popsicles.
  5. Insert Sticks and Freeze: Insert popsicle sticks into each mold and place them in the freezer. Freeze for at least 6 hours or overnight to ensure they are fully frozen.
  6. Remove and Serve: To release the popsicles from the molds, briefly run the outside of the molds under warm water for a few seconds and gently pull out the popsicles. Enjoy immediately or keep them stored in the freezer.
