Description

Tomato Bean Pasta is a simple, hearty, and budget-friendly pasta dish that combines tender beans with a rich tomato sauce. This filling and nutritious meal is perfect for a quick dinner and easy to prepare with pantry staples.

Ingredients

Base Ingredients

  • 2 cups cooked pasta
  • 1 can beans (white or kidney, drained)
  • 1 can crushed tomatoes

Flavorings

  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Optional Garnish

  • Grated cheese
  • Fresh parsley

Instructions

  1. Cook the Pasta: Prepare the pasta according to the package instructions until al dente. Drain and set aside to be combined later.
  2. Sauté Garlic: Heat olive oil in a pan over medium heat and add the minced garlic. Cook for about 1-2 minutes until fragrant but not browned.
  3. Simmer Tomato Sauce: Pour in the crushed tomatoes and sprinkle in the dried oregano. Let the sauce simmer gently for 5 to 7 minutes, allowing the flavors to meld.
  4. Add Beans: Stir the drained beans into the tomato sauce and cook for an additional 3 to 5 minutes to warm through.
  5. Combine Pasta and Sauce: Add the cooked pasta to the pan with the tomato-bean sauce. Toss everything together to evenly coat the pasta with the sauce.
  6. Season: Taste and season the dish with salt and pepper as desired.
  7. Serve: Plate the pasta warm and garnish with grated cheese or fresh parsley if using.

Notes

  • Use canned lentils instead of beans for a different flavor and texture.
  • Add chili flakes while simmering the sauce for a spicy kick.
