Ingredients

For the Chicken

  • 1 lb (450 g) boneless, skinless chicken breasts

For the Salad

  • 6 cups mixed greens
  • 1 cucumber, sliced
  • 1 carrot, shredded
  • 1 red bell pepper, thinly sliced
  • 1/2 cup edamame
  • 1/2 avocado, sliced
  • 1/4 cup red cabbage, shredded
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

  • 2 tablespoons teriyaki sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1 teaspoon honey


Instructions

  1. Prepare the marinade: In a bowl, combine teriyaki sauce, olive oil, grated fresh ginger, and minced garlic. This mixture forms the flavorful base for the chicken.
  2. Marinate the chicken: Add the boneless, skinless chicken breasts to the marinade and let them soak for 20–30 minutes to absorb the flavors thoroughly.
  3. Grill the chicken: Preheat the grill to medium-high heat. Grill the marinated chicken for 5–7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through with a nice char.
  4. Rest and slice: Remove the chicken from the grill and allow it to rest for 5 minutes to retain its juices. Then slice it into thin strips for serving.
  5. Assemble the salad: In a large bowl, combine mixed greens, sliced cucumber, shredded carrot, thinly sliced red bell pepper, edamame, sliced avocado, shredded red cabbage, and sliced green onions.
  6. Make the dressing: In a small bowl, whisk together teriyaki sauce, rice vinegar, lime juice, sesame oil, and honey until well combined and smooth.
