Description

A delicious and comforting chicken casserole featuring tender diced chicken breasts, cooked rice, and fresh broccoli, all coated in a sweet and savory homemade teriyaki sauce. This easy, one-dish meal is perfect for a quick family dinner, combining simple ingredients with flavorful Asian-inspired seasoning for a satisfying main course.

Ingredients

Chicken and Vegetables

  • 700 g boneless, skinless chicken breasts, diced
  • 2 cups cooked white or brown rice
  • 2 cups broccoli florets

Teriyaki Sauce

  • ½ cup low-sodium soy sauce
  • ¼ cup honey
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp cornstarch
  • 2 tbsp water

Additional Toppings

  • ½ cup shredded mozzarella or cheddar cheese (optional)
  • 2 green onions, sliced
  • 1 tsp sesame seeds
  • ½ tsp black pepper

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 190°C (375°F) and lightly grease a casserole dish to prevent sticking.
  2. Make Teriyaki Sauce: In a small bowl, whisk together the low-sodium soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated fresh ginger until combined.
  3. Thicken Sauce: Mix the cornstarch with water to create a slurry, then stir this mixture into the prepared teriyaki sauce to help it thicken during baking.
  4. Combine Casserole Ingredients: Place the cooked rice, broccoli florets, and diced chicken breasts into the greased casserole dish.
  5. Add Sauce and Toss: Pour the teriyaki sauce evenly over the chicken, rice, and broccoli, then toss gently to coat all ingredients thoroughly with the sauce.
  6. Bake Covered: Cover the casserole dish with aluminum foil and bake in the preheated oven for 25 minutes to allow the chicken to cook and flavors to meld.
  7. Bake Uncovered: Remove the foil and bake for an additional 10 to 15 minutes until the chicken is fully cooked and the casserole is bubbling around the edges.
  8. Add Cheese (Optional): Sprinkle the shredded mozzarella or cheddar cheese on top if using, then return the casserole to the oven for 2 to 3 minutes until the cheese melts.
  9. Garnish and Serve: Remove from the oven and garnish with sliced green onions and sesame seeds before serving hot.

Notes

  • Use leftover cooked chicken and rice to make this casserole even faster and reduce prep time.
  • Incorporate additional vegetables such as bell peppers, carrots, or snap peas for more texture and nutrients.
  • For a lower-carb alternative, substitute rice with cauliflower rice.
  • You can adjust the amount of honey in the sauce to make it more or less sweet according to your taste preferences.
