Description

This taco bubble up bake is a delightful and easy weeknight dinner that combines savory taco-seasoned ground beef, bubbly biscuit dough, zesty salsa, and melty Mexican blend cheese. It’s a comforting casserole that brings all the flavors of tacos into one hearty, cheesy bake, perfect for busy evenings or casual family meals.

Ingredients

Main Ingredients

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/2 cup water
  • 1 can (16 oz) refrigerated biscuit dough, cut into quarters
  • 1 cup salsa (or enchilada sauce)
  • 1 cup canned black beans, rinsed and drained (optional)
  • 1 cup frozen corn (optional)
  • 2 cups shredded Mexican blend cheese

Toppings

  • Sour cream
  • Shredded lettuce
  • Diced tomatoes
  • Jalapeños
  • Cilantro

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking and ensure easy cleanup.
  2. Cook the beef: In a skillet over medium heat, brown the ground beef thoroughly, breaking it up as it cooks. Once browned, drain any excess fat to keep the bake from becoming greasy.
  3. Add taco seasoning: Stir in the taco seasoning packet and 1/2 cup water, then simmer the mixture for 2–3 minutes until it thickens and the flavors meld.
  4. Combine ingredients: In a large bowl, mix the cooked seasoned beef with salsa, rinsed and drained black beans, and frozen corn if using, creating a well-mixed base for the bake.
  5. Add biscuit dough: Toss the quartered biscuit dough pieces into the beef mixture, ensuring they are well coated with the flavorful ingredients.
  6. Assemble the bake: Pour the mixture into the prepared baking dish and spread evenly to create a uniform layer.
  7. Top with cheese: Sprinkle the shredded Mexican blend cheese over the top evenly, which will melt and create a delicious, bubbly crust.
  8. Bake: Place the dish uncovered in the oven and bake for 25–30 minutes, or until the biscuits are fully cooked through and the cheese is golden and bubbly.
  9. Serve: Let the casserole cool slightly before serving. Add your favorite taco toppings such as sour cream, shredded lettuce, diced tomatoes, jalapeños, and cilantro to enhance each serving.

Notes

  • Check the center biscuits with a toothpick to ensure they’re fully baked before removing from the oven.
  • Swap salsa for enchilada sauce if you prefer a saucier texture and flavor.
  • Use reduced-fat cheese and lean ground turkey to lighten the dish.
  • This bake reheats well, making it ideal for meal prepping or leftovers.
