Ingredients
Meat and Seasoning
- 1 lb ground beef (or ground turkey/chicken)
- 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
- 1/2 cup water
Main Ingredients
- 1 can (16 oz) refrigerated biscuit dough, cut into quarters
- 1 cup salsa (or enchilada sauce)
- 1 cup canned black beans, rinsed and drained (optional)
- 1 cup frozen corn (optional)
- 2 cups shredded Mexican blend cheese
Toppings
- Sour cream
- Shredded lettuce
- Diced tomatoes
- Jalapeños
- Cilantro
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
- Cook Ground Beef: In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat to keep the dish from being greasy.
- Add Seasoning: Stir in the taco seasoning and water with the cooked beef, and simmer for 2 to 3 minutes until the mixture thickens and the flavors meld.
- Combine Ingredients: In a large mixing bowl, combine the cooked seasoned beef with salsa, black beans, and frozen corn if using, mixing thoroughly.
- Add Biscuit Dough: Add the quartered biscuit dough pieces into the bowl and gently toss until they are evenly coated with the beef and salsa mixture.
- Assemble the Bake: Pour the entire mixture into the prepared baking dish and spread it out evenly to ensure even cooking.
- Add Cheese: Sprinkle the shredded Mexican blend cheese evenly over the top of the mixture.
- Bake: Place the dish uncovered in the oven and bake for 25 to 30 minutes, or until the biscuit dough is fully cooked through and the cheese is melted and bubbly.
- Serve: Let the bake cool slightly. Serve warm topped with your favorite taco accompaniments such as sour cream, shredded lettuce, diced tomatoes, jalapeños, and fresh cilantro.
Notes
- Test the center biscuits with a toothpick to ensure they are fully cooked before removing from the oven.
- For a saucier casserole, substitute salsa with enchilada sauce.
- For a lighter option, use reduced-fat cheese and lean ground turkey instead of ground beef.
- This dish is excellent for meal prep and reheats well in the microwave.
