Ingredients

Vegetables and Beans

  • 3 medium sweet potatoes, peeled and cubed
  • 2 cans black beans, drained and rinsed (about 15 oz each)

  • 1 red bell pepper, diced

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) to get it ready for roasting the sweet potatoes.
