Ingredients
Sweet Potato Base
- 2 large sweet potatoes, sliced into rounds
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Toppings
- 1 cup mini marshmallows
- 1/2 cup chopped pecans
- 2 tablespoons maple syrup or honey
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough for roasting sweet potatoes to tender perfection.
- Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Toss Sweet Potato Slices: In a mixing bowl, combine the sweet potato rounds with olive oil, salt, and black pepper. Toss well to coat each slice evenly with seasoning and oil.
- Arrange for Roasting: Lay the sweet potato slices in a single layer on the prepared baking sheet, ensuring they are not overlapping to cook evenly.
- Roast Sweet Potatoes: Place the baking sheet in the oven and roast for 15–18 minutes until the sweet potato rounds become tender and slightly golden around the edges.
- Add Toppings: Remove the baking sheet from the oven and immediately top each roasted sweet potato slice with mini marshmallows and chopped pecans to maximize melting and toasting.
- Toast Marshmallows: Return the baking sheet to the oven for an additional 3–5 minutes, or until the marshmallows are slightly melted and have a toasted golden-brown color.
- Drizzle Sweetener: Once out of the oven, drizzle the maple syrup or honey evenly over the sweet potato bites for an extra layer of sweetness and shine.
- Serve Warm: Serve the sweet potato bites warm to enjoy the contrast of the soft, sweet potatoes with toasted marshmallows and crunchy pecans at their best.
Notes
- Serve warm for the best flavor and texture experience.
- For an extra hint of warmth and sweetness, add a pinch of cinnamon before roasting.
