Description
Summer Tomato Sauce Pasta is a simple, fresh pasta dish that highlights the natural sweetness of ripe summer tomatoes. This light and flavorful recipe combines juicy tomatoes, sautéed garlic, fresh basil, and Parmesan cheese to create a perfect easy weeknight dinner that’s both satisfying and refreshing.
Ingredients
Pasta
- 12 ounces spaghetti, linguine, or penne
Sauce
- 2 tablespoons extra-virgin olive oil
- 3 cloves garlic, thinly sliced
- 4 cups ripe tomatoes, diced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes, optional
- ¼ cup fresh basil, chopped
- 1 tablespoon fresh lemon juice, optional
Toppings
- ½ cup grated Parmesan cheese
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Reserve ½ cup of the pasta cooking water before draining the pasta.
- Heat the olive oil and garlic: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and cook for 30 to 60 seconds, stirring constantly, being careful not to burn the garlic as it will turn bitter.
- Cook the tomatoes: Add the diced tomatoes, salt, black pepper, and optional red pepper flakes to the skillet. Cook uncovered for 8 to 10 minutes, stirring occasionally, until the tomatoes soften and release their juices, forming a fresh sauce.
- Toss pasta with sauce: Add the drained pasta directly to the skillet with the tomato sauce. Toss gently to combine and coat the pasta. Add a splash of the reserved pasta water as needed to loosen the sauce and help it cling to the pasta evenly.
- Add fresh basil and lemon juice: Stir in the chopped fresh basil and, if using, the fresh lemon juice for brightness and extra flavor.
- Finish with Parmesan: Remove the skillet from heat and sprinkle the grated Parmesan cheese over the pasta. Toss lightly or serve immediately, allowing the cheese to melt slightly.
- Serve: Plate the pasta and garnish with additional basil leaves, Parmesan, and a drizzle of olive oil if desired. Serve immediately while warm and fresh.
Notes
- Use the ripest, freshest tomatoes available for the best flavor and natural sweetness.
- Cherry or grape tomatoes can be substituted for regular diced tomatoes and offer a sweeter taste.
- Avoid overcooking the tomatoes to keep the sauce bright and fresh rather than stewed.
- For added protein, top with grilled chicken, shrimp, or white beans.
- To make this dish vegan, omit the Parmesan cheese or substitute with a plant-based cheese alternative.
