Description

Sweet peaches, creamy avocado, crunchy nuts, and fresh spinach come together in a light and refreshing summer salad, perfectly complemented by a simple honey balsamic dressing. This salad is a vibrant, nutritious option ideal for warm weather meals or a healthy side dish.

Ingredients

Salad

  • 5 cups baby spinach
  • 2 ripe peaches, sliced
  • 1 avocado, sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup toasted pecans or almonds
  • ¼ cup crumbled feta cheese

Dressing

  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Arrange Spinach: Place 5 cups of baby spinach evenly in a large serving bowl as the base of the salad.
  2. Add Toppings: Layer the sliced ripe peaches, sliced avocado, thinly sliced red onion, toasted pecans or almonds, and crumbled feta cheese evenly over the spinach.
  3. Prepare Dressing: In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon balsamic vinegar, 1 tablespoon honey, 1 teaspoon Dijon mustard, and salt and pepper to taste until fully combined and emulsified.
  4. Dress the Salad: Drizzle the prepared honey balsamic dressing over the salad just before serving to keep the greens fresh and crisp.
  5. Toss and Serve: Gently toss the salad to evenly coat the ingredients in dressing and serve immediately for best flavor and texture.

Notes

  • Nectarines can be substituted for peaches for a slightly different flavor profile.
  • For a complete meal, add grilled chicken to increase protein content.
  • Dress the salad just before serving to maintain the freshness and crispness of the spinach leaves.
