Description

Succotash is a classic American side dish featuring sweet corn and lima beans sautéed with onions and bell peppers. This fresh and colorful recipe is simple to prepare, making it a perfect accompaniment for summer meals or any occasion needing a vibrant, nutritious vegetable dish.

Ingredients

Vegetables

  • 2 cups fresh or frozen corn
  • 1 1/2 cups lima beans (fresh or frozen)
  • 1 small onion, diced
  • 1/2 cup red bell pepper, chopped

Other Ingredients

  • 2 tablespoons butter
  • Salt and black pepper to taste

Instructions

  1. Melt Butter: Heat 2 tablespoons of butter in a large skillet over medium heat until fully melted and slightly bubbling, preparing it for sautéing the vegetables.
  2. Sauté Onion and Bell Pepper: Add the diced onion and chopped red bell pepper to the skillet. Cook, stirring occasionally, until the vegetables are soft and fragrant, about 4-5 minutes.
  3. Add Corn and Lima Beans: Stir in 2 cups of corn and 1 1/2 cups of lima beans, mixing them evenly with the sautéed onion and bell pepper.
  4. Cook the Succotash: Continue cooking the mixture for 8–10 minutes, stirring occasionally to prevent sticking, until the corn and lima beans are tender and heated through.
  5. Season and Serve: Season the succotash with salt and black pepper to taste. Stir well and serve warm as a delightful side dish.

Notes

  • You can add cooked bacon or pancetta for extra smoky flavor and richness.
  • Fresh vegetables provide the best flavor and texture, but frozen corn and lima beans work well and are convenient.
  • For a vegan version, substitute butter with olive oil or a plant-based margarine.
  • Consider adding fresh herbs like thyme or parsley for an additional flavor boost.
