Ingredients
Main Ingredients
- 4 cups seedless watermelon, cubed
- 1 1/2 cups fresh strawberries, hulled
- 2 tablespoons fresh lime juice
Optional Ingredients
- 1–2 tablespoons honey or maple syrup
- 1 teaspoon lime zest
- 1/2 cup small diced strawberries
Instructions
- Prepare the Ingredients: Wash, hull, and cube the watermelon and strawberries. Measure the fresh lime juice, honey or maple syrup, and lime zest if using.
- Blend the Fruit: Add the watermelon, strawberries, lime juice, optional honey or maple syrup, and lime zest into a blender. Blend thoroughly until the mixture is completely smooth with no chunks remaining.
- Add Diced Strawberries (Optional): If using small diced strawberries for texture, evenly divide them among 8 popsicle molds before pouring in the blended fruit mixture.
- Fill the Molds: Pour the smooth fruit mixture carefully into the popsicle molds, leaving a little space at the top to allow for expansion during freezing.
- Insert Popsicle Sticks: Place the popsicle sticks into the molds, ensuring they are centered.
- Freeze: Place the molds in the freezer and freeze for at least 5 to 6 hours, or until the popsicles are completely solid.
- Unmold and Serve: To release the popsicles, briefly run warm water over the exterior of the molds and gently pull the popsicles out. Serve immediately for a cool, refreshing treat.
Notes
- Taste the blended mixture before freezing and add more sweetener if desired.
- Use very ripe watermelon and strawberries for the best natural sweetness.
- For a creamy texture, blend in 1/2 cup of coconut milk along with the fruit.
- Store the popsicles in the freezer for up to 1 month to maintain freshness.
- If your molds do not have sticks, freeze the mixture for about 1 hour before inserting wooden sticks to ensure they stand upright.
