Description

A creamy and comforting spinach chicken casserole featuring tender cooked chicken, fresh sautéed spinach, rich cream cheese, and gooey melted mozzarella. This easy-to-make dish is perfect for a satisfying weeknight dinner packed with flavor and a pleasant blend of textures.

Ingredients

Chicken and Spinach

  • 2 cups cooked chicken (shredded or cubed)
  • 2 cups fresh spinach
  • 2 cloves garlic (minced)

Dairy and Seasoning

  • 4 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) ensuring it’s ready to bake the casserole evenly.
  2. Sauté Spinach and Garlic: In a pan over medium heat, sauté the fresh spinach with minced garlic until the spinach is wilted and aromatic, about 3-4 minutes. Remove from heat.
  3. Mix Cream Cheese Base: In a mixing bowl, combine the softened cream cheese, sour cream, Italian seasoning, salt, and pepper. Stir until smooth and well blended.
  4. Combine Chicken and Spinach: Add the cooked chicken and sautéed spinach to the cream cheese mixture. Mix thoroughly to ensure all ingredients are evenly incorporated.
  5. Assemble Casserole: Transfer the mixture into a greased baking dish, spreading it out evenly. Sprinkle the shredded mozzarella cheese on top to cover the surface.
  6. Bake: Place the baking dish in the preheated oven and bake for 20 to 25 minutes until the casserole is bubbly and the mozzarella topping is melted and golden brown.
  7. Cool and Serve: Remove from the oven and allow to cool slightly for 5 minutes before serving to let the casserole set for easier portions.

Notes

  • Frozen spinach can be used instead of fresh; just make sure to thaw and drain excess water.
  • For extra flavor, consider adding sautéed mushrooms or chopped sun-dried tomatoes to the mixture.
  • This casserole pairs wonderfully with rice, pasta, or fresh bread to complete the meal.
