Avocado Cream
- 1 ripe avocado
- ¼ cup plain Greek yogurt
- 2 tbsp fresh lime juice
- 1 small garlic clove
- 2 tbsp water
- ¼ tsp salt
Instructions

- Make the avocado cream: In a blender or food processor, combine the ripe avocado, plain Greek yogurt, fresh lime juice, garlic clove, water, and salt; blend until smooth and creamy, adjusting water as needed for desired consistency.
- Cook the shrimp: Heat olive oil in a skillet over medium-high heat. Add the seasoned shrimp and cook for 2 to 3 minutes per side, or until they turn pink and are cooked through, being careful not to overcook.
- Warm the tortillas: Heat the corn tortillas in a dry skillet for about 30 seconds on each side until soft and pliable, perfect for folding around the fillings.
