Ingredients
Meat and Vegetables
- 1 lb (450g) beef, cubed
- 2 cups potatoes, diced
- 1 carrot, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
Liquids and Seasonings
- 3 cups beef broth
- 1 cup diced tomatoes
- 1 tsp chili powder
- ½ tsp cayenne pepper (adjust to taste)
- Salt and pepper to taste
- Optional: paprika or cumin
Instructions
- Prepare the ingredients: Cube the beef and chop the potatoes, carrot, onion, and garlic according to the given sizes to ensure even cooking.
- Combine in the slow cooker: Place the beef cubes, diced potatoes, sliced carrot, chopped onion, and minced garlic into the slow cooker bowl.
- Add liquids and spices: Pour in the beef broth and diced tomatoes. Sprinkle the chili powder, cayenne pepper, salt, pepper, and optional spices such as paprika or cumin over the ingredients. Stir gently to mix evenly.
- Cook the stew: Cover the slow cooker with its lid. Set it to cook on low for 6 to 8 hours or on high for 3 to 4 hours, allowing the flavors to meld and beef to become tender.
- Adjust seasoning and serve: Once cooking is done, taste the stew and adjust salt, pepper, or spice levels if needed. Serve the stew warm for a comforting meal.
Notes
- Adjust the amount of cayenne pepper to control the spice level based on your preference.
- Add beans or corn for additional texture and nutrients.
- Using stew beef or chuck works best for tender, flavorful meat after slow cooking.
- For thicker stew, you can remove the lid in the last 30 minutes of cooking to reduce liquid.
