Description

Juicy, smoky beef ribs coated in a bold Texas-style rub, slow-smoked to perfection to achieve deep flavor and tender texture that melts in your mouth. These ribs capture the essence of authentic Texas BBQ with a simple yet flavorful dry rub and low-and-slow smoking technique.

Ingredients

Beef Ribs

  • 2 lbs beef ribs

Texas-Style Rub

  • 2 tbsp coarse salt
  • 2 tbsp black pepper
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Preheat smoker: Set your smoker to 120°C (250°F) to ensure it reaches the ideal temperature for slow smoking beef ribs.
  2. Prepare ribs: Pat the beef ribs dry with paper towels to remove excess moisture, then coat them generously and evenly with the Texas-style rub to build flavor.
  3. Smoke ribs: Place the ribs bone-side down in the smoker. Maintain a consistent temperature and smoke for 5–6 hours to allow the ribs to slowly absorb the smoky flavor and become tender.
  4. Optional foil wrap: To achieve extra tenderness, wrap the ribs in foil halfway through the smoking process, which helps retain moisture and accelerate tenderizing.
  5. Rest the ribs: After smoking, let the ribs rest for 10–15 minutes to allow the juices to redistribute before slicing and serving.

Notes

  • Use wood chips like oak or hickory for authentic Texas BBQ flavor.
  • Keep the smoker temperature stable throughout to ensure even cooking and tenderness.
  • Wrapping ribs in foil is optional but recommended for softer meat.
  • Allow ribs to rest after smoking to enhance juiciness and flavor.
