Ingredients
Beef Roast
- 2–3 lb beef roast
- Salt and pepper to taste
Sweet and Sour Sauce
- ½ cup pineapple juice
- ¼ cup vinegar (white or apple cider)
- ¼ cup brown sugar
- 2 tbsp soy sauce (use gluten-free soy sauce for gluten-free version)
- 2 cloves garlic, minced
Vegetables
- 1 bell pepper, chopped
Instructions
- Season the Beef: Generously season the beef roast on all sides with salt and pepper to enhance its flavor.
- Place in Slow Cooker: Position the seasoned roast in the slow cooker base, ensuring it sits centrally for even cooking.
- Prepare the Sauce: In a mixing bowl, combine pineapple juice, vinegar, brown sugar, soy sauce, and minced garlic. Stir until the brown sugar is mostly dissolved, creating a balanced sweet and sour sauce.
- Pour Sauce Over Roast: Pour the prepared sweet and sour sauce evenly over the roast in the slow cooker, ensuring the meat is well coated.
- Add Bell Pepper: Scatter the chopped bell pepper around the roast inside the slow cooker to infuse flavor and add texture.
- Cook the Roast: Cover the slow cooker with its lid and cook on low for 6–8 hours or on high for 4–5 hours. The meat should become tender and easily shredded with a fork.
- Serve: Once cooked, slice or shred the beef roast and serve it hot, spooning the cooking sauce and bell peppers over the top. Ideal served over steamed rice.
Notes
- Add pineapple chunks during cooking for extra natural sweetness and texture.
- Serve the beef roast over cooked rice or noodles to create a complete, hearty meal.
- For a thicker sauce, remove the cooked meat and reduce the liquid on the stovetop before serving.
- Use gluten-free soy sauce to make this recipe gluten-free.
