Description

Slow Cooker Chuck Roast is a delicious and easy-to-make comfort food featuring a tender, juicy beef chuck roast slowly cooked with hearty vegetables and flavorful broth. The long, low cooking method ensures the meat becomes melt-in-your-mouth tender, ideal for a satisfying family dinner.

Ingredients

Meat

  • 34 lbs beef chuck roast

Vegetables

  • 4 medium potatoes, peeled and cut into chunks
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced

Liquids & Sauces

  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce

Seasonings & Oils

  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

  1. Heat Oil: Heat olive oil in a skillet over medium-high heat to prepare for searing the meat.
  2. Season the Roast: Season the beef chuck roast evenly on all sides with salt, black pepper, and paprika to enhance flavor.
  3. Sear the Meat: Place the roast in the hot skillet and sear for 2–3 minutes on each side until browned, creating a flavorful crust.
  4. Prepare Vegetables: Place the potatoes, carrots, chopped onion, and minced garlic into the bottom of the slow cooker, forming a vegetable bed.
  5. Add Roast to Slow Cooker: Lay the seared chuck roast on top of the vegetables in the slow cooker.
  6. Add Liquids: Pour the beef broth and Worcestershire sauce evenly over the roast and vegetables for moisture and flavor.
  7. Cook: Cover the slow cooker and cook on low setting for 8 hours or on high setting for 5 hours until the meat is tender and easily shredded.
  8. Serve: Once cooked, slice or shred the roast and serve it alongside the slow-cooked vegetables and flavorful cooking juices.
