Ingredients
For the Skewers
- 1½ pounds large shrimp, peeled and deveined
- 3 cups fresh pineapple chunks
For the Marinade
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- 1 teaspoon salt
- ½ teaspoon black pepper
For Garnish & Serving
- Chopped fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Soak Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
- Prepare Marinade: In a large bowl, whisk together olive oil, lime juice, minced garlic, honey, smoked paprika, chili powder, salt, and black pepper until thoroughly combined to create a flavorful marinade.
- Marinate Shrimp: Add the peeled and deveined shrimp to the marinade and toss well to coat. Let it marinate for 15–20 minutes so the shrimp absorb the flavors.
- Assemble Skewers: Thread the shrimp and pineapple chunks alternately onto the soaked skewers, preparing them evenly for grilling.
- Preheat Grill: Heat your grill to medium-high to ensure a good sear and caramelization.
- Grill Skewers: Place the skewers on the grill and cook for 2–3 minutes per side, or until the shrimp turn pink and opaque, and the pineapple shows light caramelization.
- Garnish and Serve: Remove skewers from grill, garnish with freshly chopped cilantro, and serve immediately with lime wedges for an extra bright burst of flavor.
Notes
- Avoid overcooking the shrimp to keep them tender and juicy.
- For added color and flavor, include bell peppers or red onion pieces between shrimp and pineapple on the skewers.
- These skewers pair wonderfully with coconut rice, quinoa, or a fresh green salad for a complete meal.
