Ingredients
Grains and Broth
- 1 cup jasmine rice
- 8 cups chicken broth
Proteins
- 1 chicken breast, sliced or shredded
- 200 g shrimp, peeled and deveined
Vegetables and Aromatics
- 1 carrot, finely chopped
- 1/2 cup spinach or leafy greens
- 2 slices ginger
- 2 cloves garlic, minced
Seasonings
- Salt, to taste
- White pepper, to taste
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
Garnish
- Green onions, finely sliced
Instructions
- Prepare the Rice and Broth: Rinse the jasmine rice thoroughly under cold water to remove excess starch. Add the rinsed rice to a large pot along with 8 cups of chicken broth.
- Simmer the Congee Base: Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer gently for 30 to 40 minutes. Stir occasionally to prevent the rice from sticking to the bottom and to encourage a creamy consistency.
- Add Aromatics and Chicken: Add the sliced ginger and minced garlic into the pot. Then incorporate the chicken breast pieces, cooking them through until tender, about 10-15 minutes depending on the thickness of the chicken.
- Introduce Shrimp and Vegetables: Add the peeled and deveined shrimp along with the chopped carrot and spinach. Continue cooking for an additional 5 to 7 minutes until the shrimp turn pink and vegetables soften.
- Season the Congee: Stir in the soy sauce, sesame oil, salt, and white pepper to taste. Adjust the seasoning according to your preference for a balanced savory flavor.
- Garnish and Serve: Ladle the congee into bowls and garnish generously with freshly sliced green onions. Serve warm to enjoy the comforting flavors and textures.
Notes
- Stir frequently during simmering to achieve a creamy, smooth texture and to prevent sticking.
- If the congee becomes too thick, add extra chicken broth or water to reach your desired consistency.
- For convenience, use leftover cooked chicken to reduce cooking time.
- Adjust seasoning gradually, especially salt and soy sauce, to suit dietary preferences.
- For added flavor, consider adding a splash of rice vinegar or chili oil before serving.
