Ingredients
Main Ingredients
- 1 lb large shrimp, peeled and deveined
- 12 oz smoked sausage, sliced
- 12 oz baby potatoes, halved and parboiled
- 2 ears corn, cut into 4 pieces each
Seasoning & Sauce
- 4 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 tsp Old Bay seasoning
- ½ tsp paprika
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley
- Lemon wedges for serving
Instructions
- Preheat the Grill or Oven: Set your grill or oven to 400°F (204°C) to ensure it’s hot and ready for cooking the foil packets evenly.
- Combine Main Ingredients: In a large bowl, add the peeled and deveined shrimp, sliced smoked sausage, halved parboiled baby potatoes, and cut corn pieces. Toss gently to mix.
- Prepare the Garlic Butter Mixture: In a separate bowl, whisk together melted butter, olive oil, minced garlic, Old Bay seasoning, paprika, salt, and black pepper until evenly blended.
- Coat the Ingredients: Pour the butter mixture over the shrimp, sausage, potatoes, and corn. Toss well so that all components are coated with the flavorful seasoning.
- Assemble Foil Packets: Divide the mixture evenly onto four large sheets of heavy-duty aluminum foil. Fold and seal each packet tightly to lock in moisture and flavor.
- Cook the Packets: Place the foil packets on the grill grates or a baking sheet if using an oven. Cook for 15 to 18 minutes, or until the shrimp are opaque and cooked through, and the vegetables are tender.
- Serve: Carefully open the hot packets, avoiding the steam. Garnish with chopped fresh parsley and serve with lemon wedges on the side for squeezing over the shrimp boil.
Notes
- Parboiling the baby potatoes before assembling ensures they cook evenly inside the foil packets.
- For an extra spicy kick, substitute smoked sausage with andouille sausage.
- Be cautious when opening the foil packets as hot steam will escape, which can cause burns.
