Description
A light and wholesome soba noodle dish featuring tender shredded chicken and crisp cabbage. This balanced meal is simple, nutritious, and perfect for a quick yet satisfying option that blends Japanese flavors with a healthy twist.
Ingredients
Main Ingredients
- 200 g soba noodles
- 1 cup cooked shredded chicken
- 1 1/2 cups cabbage, shredded
Seasonings and Condiments
- 1 tablespoon oil
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon rice vinegar
- Salt and white pepper, to taste
Garnishes
- Sesame seeds, for garnish
- Green onions, sliced, for garnish
Instructions
- Cook the soba noodles: Prepare the soba noodles according to the package instructions, typically boiling them until tender but still firm. Once cooked, rinse thoroughly under cold water to stop cooking and drain well.
- Sauté the garlic: Heat the oil in a pan over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds to 1 minute, being careful not to burn it.
- Cook the cabbage: Add the shredded cabbage to the pan and cook, stirring occasionally, until it is slightly softened but still retains some crunch, about 3-4 minutes.
- Add the shredded chicken: Stir in the cooked shredded chicken, mixing well to combine with the cabbage and garlic, allowing it to warm through for about 2 minutes.
- Toss with soba noodles: Add the drained soba noodles to the pan and toss everything together gently to combine evenly.
- Season the dish: Add soy sauce, sesame oil, rice vinegar, salt, and white pepper to taste. Toss again to ensure the flavors coat the noodles, chicken, and cabbage thoroughly.
- Garnish and serve: Remove from heat and garnish the dish with a sprinkle of sesame seeds and sliced green onions. Serve immediately for best flavor and texture.
Notes
- Use leftover cooked chicken to save preparation time and enhance flavor.
- Add finely sliced carrots or bell peppers for extra color and nutritional value.
