Description

Sheet Pan Sausage and Tortellini is an easy, flavorful one-pan dinner that combines tender cheese tortellini, savory Italian sausage, and vibrant vegetables roasted to perfection. With melted Parmesan cheese and fresh basil garnish, this recipe offers a delicious, fuss-free meal ideal for busy weeknights with minimal cleanup.

Ingredients

Main Ingredients

  • 20 oz refrigerated cheese tortellini
  • 1 lb Italian sausage, sliced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 small red onion, sliced
  • 2 cups cherry tomatoes

Seasonings and Garnish

  • 3 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper to prevent sticking and make cleanup easy.
  2. Combine Ingredients: Place the tortellini, sliced Italian sausage, red bell pepper, zucchini, red onion, and cherry tomatoes onto the prepared sheet pan in a single layer to ensure even cooking.
  3. Season and Toss: Drizzle the olive oil over the ingredients. Sprinkle Italian seasoning, garlic powder, salt, and black pepper evenly. Toss everything gently but thoroughly to coat all the pieces in the seasoning and oil.
  4. Roast: Place the sheet pan in the oven and roast for 20 to 25 minutes. Stir the mixture halfway through cooking to promote even browning and to ensure the sausage is fully cooked and vegetables are tender.
  5. Add Parmesan: After roasting, evenly sprinkle the grated Parmesan cheese over the top of the mixture. Return the pan to the oven and bake for an additional 2 to 3 minutes until the cheese has melted and slightly browned.
  6. Serve: Remove from the oven, garnish with fresh basil leaves, and serve the dish warm for best flavor and texture.

Notes

  • Using fully cooked sausage will reduce the overall cooking time and simplify the process.
  • Add a pinch of red pepper flakes when seasoning to introduce some heat.
  • For a gluten-free option, substitute cheese tortellini with a gluten-free variety.
  • Ensure vegetables are cut evenly to cook uniformly.
