Ingredients

Meatloaf

  • 1½ pounds ground beef

Instructions

  1. Prep the oven and ingredients: Preheat your oven to 375°F (190°C) to ensure it’s hot and ready once your meatloaf is assembled. Gather all your ingredients for a smooth cooking process.
  2. Mix the meatloaf: In a large bowl, combine the ground beef, breadcrumbs, egg, diced onion, minced garlic, milk, Worcestershire sauce, salt, and black pepper. Mix gently until just combined to keep the meatloaf tender.
  3. Shape and place the meatloaf: Shape the mixture into a loaf and position it on one side of a sheet pan, allowing enough space for the vegetables on the other side.
  4. Prepare the glaze and top the meatloaf: In a small bowl, mix barbecue sauce, brown sugar, and ketchup. Spread half of this glaze evenly over the top of the meatloaf, then layer the pineapple chunks on top.
  5. Prepare the vegetables: Toss the broccoli florets with olive oil, then arrange them on the empty side of the sheet pan alongside the meatloaf.
