Ingredients

Chicken and Marinade

  • 2 lbs boneless, skinless chicken thighs

  • 2 packets Sazon seasoning
  • 3 garlic cloves, minced
  • Juice of 1 lime
  • Juice of 1 orange
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano

Instructions

  1. Prepare the marinade: In a medium bowl, whisk together olive oil, Sazon seasoning, minced garlic, lime juice, orange juice, smoked paprika, dried oregano, salt, and black pepper until well combined.
  2. Marinate the chicken: Add the chicken thighs to the marinade, ensuring each piece is thoroughly coated. Cover the bowl and refrigerate for at least 30 minutes and up to 8 hours to allow the flavors to penetrate the meat.
  3. Preheat the grill: Heat your grill to medium-high heat, approximately 375-400°F (190-204°C), to ensure a good sear and proper cooking.
  4. Grill the chicken thighs: Place the marinated chicken thighs on the grill. Cook for 6 to 7 minutes on one side without moving them to develop grill marks, then flip and cook for an additional 6 to 7 minutes on the other side. Use a meat thermometer to check that the internal temperature has reached 165°F (74°C) for safe consumption.
  5. Rest the chicken: Remove the chicken from the grill and let it rest for 5 minutes. This step allows the juices to redistribute, keeping the thighs moist and flavorful.
