Instructions

  1. Heat the oil: Warm 1 tablespoon of olive oil in a large pot over medium heat to prepare for cooking the sausage and aromatics.
  2. Cook the sausage: Add 250 g of sliced or crumbled Italian sausage to the pot and cook until browned and cooked through, releasing its savory flavors.
  3. Sauté onion and garlic: Stir in 1 chopped small onion and 2 minced garlic cloves, cooking until softened and fragrant, about 3-4 minutes.
  4. Add broth and potatoes: Pour in 4 cups of chicken broth and bring the mixture to a gentle simmer. Add the optional diced potatoes and cook until tender, approximately 10-15 minutes.
