Description

A hearty and comforting Rustic Beef and Vegetable Soup packed with ground beef, potatoes, and a variety of fresh vegetables simmered in a savory beef broth with Italian seasoning. Perfect for a satisfying meal any day.

Ingredients

Meat and Vegetables

  • 1 lb ground beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 cup green beans

Liquids and Canned Goods

  • 1 can diced tomatoes (14 oz)
  • 6 cups beef broth

Seasonings

  • 1 tsp Italian seasoning
  • Salt & pepper to taste

Instructions

  1. Brown the Beef and Onion: In a large pot over medium heat, cook the ground beef and diced onion until the beef is browned and no longer pink. Drain any excess fat from the pot to keep the soup from being greasy.
  2. Add Vegetables and Liquids: Add the diced carrots, potatoes, canned diced tomatoes (with their juices), beef broth, and Italian seasoning to the pot. Stir well to combine all ingredients thoroughly.
  3. Simmer the Soup: Bring the mixture to a boil, then reduce the heat and let it simmer gently for 25 to 30 minutes, or until the potatoes and carrots are tender and cooked through.
  4. Add Green Beans: Stir in the green beans during the last few minutes of cooking, allowing them to soften but retain some crispness.
  5. Season and Serve: Taste the soup and add salt and pepper as needed. Serve hot for a satisfying meal.

Notes

  • For a richer flavor, brown the beef in a bit of olive oil before adding the onion.
  • Feel free to substitute green beans with other vegetables like peas or corn based on preference.
  • Leftovers store well in the refrigerator for up to 3 days or can be frozen for longer storage.
  • Adjust seasoning and Italian seasoning quantity to taste.
