Description

A warm and flavorful Mediterranean-inspired roasted pumpkin dish topped with creamy garlic yogurt sauce and toasted pine nuts. This vibrant and healthy side or light vegetarian meal highlights tender, spiced pumpkin with bright lemony yogurt and crunchy pine nuts for texture and depth.

Ingredients

Roasted Pumpkin

  • 3 cups pumpkin, peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt and pepper, to taste

Yogurt Sauce

  • 1 cup plain yogurt
  • 1 clove garlic, minced
  • 1 tbsp lemon juice

Toppings & Garnish

  • 2 tbsp pine nuts, toasted
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the pumpkin cubes.
  2. Season Pumpkin: In a bowl, toss the peeled and cubed pumpkin with olive oil, paprika, cumin, salt, and pepper until evenly coated with spices.
  3. Roast Pumpkin: Spread the seasoned pumpkin cubes in a single layer on a baking sheet. Roast in the oven for 25 to 30 minutes, stirring halfway through, until the pumpkin is tender and slightly caramelized at the edges.
  4. Prepare Yogurt Sauce: While the pumpkin roasts, mix together plain yogurt, minced garlic, and lemon juice in a small bowl until smooth and well combined.
  5. Assemble Dish: Transfer the roasted pumpkin to a serving plate. Spoon the garlic yogurt sauce evenly over the warm pumpkin.
  6. Add Toppings: Sprinkle the toasted pine nuts and chopped fresh parsley over the yogurt-topped pumpkin for added flavor and texture.
  7. Serve: Serve the dish warm or at room temperature as a delicious side or light vegetarian meal.

Notes

  • You can substitute pumpkin with butternut squash for a similar sweet, hearty flavor.
  • For an extra touch of sweetness and color, drizzle honey on top or sprinkle pomegranate seeds before serving.
