Ingredients
Dry Ingredients
- 12 lasagna noodles, cooked
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
Cheese Mixture
- 2 cups ricotta cheese
- 1 egg
- ½ cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
Vegetables
- 1 zucchini, thinly sliced
- 1 yellow squash, thinly sliced
- 1 red bell pepper, sliced
- 1 cup spinach
- 1 cup shredded carrots
- 1 cup broccoli florets, finely chopped
- 2 cloves garlic, minced
Sauces & Oils
- 3 cups marinara sauce
- 2 tablespoons olive oil
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the lasagna.
- Sauté Vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the zucchini, yellow squash, red bell pepper, broccoli, shredded carrots, spinach, and minced garlic. Cook, stirring occasionally, until the vegetables are tender but still retain some firmness, about 5-7 minutes.
- Prepare Ricotta Mixture: In a bowl, combine the ricotta cheese, egg, grated Parmesan, Italian seasoning, salt, and black pepper. Mix thoroughly until smooth and well blended.
- Assemble Lasagna Layers: Spread a thin layer of marinara sauce evenly on the bottom of a baking dish. Begin layering with cooked lasagna noodles, followed by a layer of the ricotta mixture, sautéed vegetables, shredded mozzarella cheese, and marinara sauce. Repeat these layers until all ingredients are used, finishing with a top layer of mozzarella and Parmesan cheese.
- Bake Covered: Cover the assembled lasagna with aluminum foil and bake in the preheated oven for 35 minutes to cook through and allow flavors to meld.
- Bake Uncovered: Remove the foil and continue baking for an additional 15 minutes or until the top is golden brown and bubbly.
- Rest and Serve: Let the lasagna rest for 10 minutes after baking to set. Slice into portions and serve warm.
Notes
- Add mushrooms or eggplant for extra flavor and texture.
