Tofu and Vegetables
- 14 oz firm tofu, pressed and cut into cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 small red onion, cut into chunks
- 1 zucchini, sliced
- 1 cup cherry tomatoes
Marinade
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tbsp lemon juice
- 1 tsp garlic powder
- ½ tsp smoked paprika
- ¼ tsp black pepper

- Wooden or metal skewers (if wooden, soaked in water for 30 minutes)
Instructions
- Soak the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking.
- Prepare Marinade: In a bowl, whisk together olive oil, soy sauce, maple syrup, lemon juice, garlic powder, smoked paprika, and black pepper until well combined.
- Marinate Tofu: Add the pressed and cubed tofu to the marinade, gently tossing to coat evenly. Allow the tofu to marinate for 15–30 minutes to absorb flavors.
- Assemble Kabobs: Thread the marinated tofu cubes and prepared vegetables onto the skewers, alternating colors to create an appealing rainbow pattern.
- Preheat Cooking Equipment: Preheat a grill or oven to 425°F (220°C) to ensure even cooking and a nice char.
- Cook Kabobs: Grill the kabobs for 10–15 minutes, turning occasionally, until vegetables are tender and tofu has light browning. Alternatively, bake on a lined baking sheet in the oven for 20–25 minutes, turning once halfway through.
- Brush with Marinade: Optionally, brush the kabobs with any remaining marinade during cooking to enhance flavor and moisture.
- Serve: Serve the kabobs warm alongside rice, quinoa, or your preferred dipping sauce for a complete meal.
