Ingredients

Fruit Layers

  • 1 cup strawberries, hulled and halved
  • 1 cup mango, peeled and chopped
  • 1 cup pineapple, chopped

Base Mixture

  • 2 cups plain or vanilla yogurt (or coconut yogurt for dairy-free)
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon or lime juice


Instructions

  1. Prepare the fruit: Wash, peel, and chop all the fruits as needed to ensure they blend smoothly and are ready for layering in the popsicle molds.
  2. Blend the strawberry layer: Combine strawberries with about 1/3 cup of yogurt and 1 teaspoon of honey in a blender. Blend until smooth, then pour a small layer into the bottom of the popsicle molds.
  3. Freeze the first layer: Place the molds in the freezer until the strawberry layer is partially firm, about 30 minutes, to prevent mixing with the next layer.
  4. Blend and add mango layer: Blend mango with another 1/3 cup of yogurt, 1 teaspoon honey, and a bit of lemon or lime juice until smooth. Pour gently on top of the strawberry layer, then freeze again until partially set.
  5. Continue layering: Repeat the blending process separately with pineapple, kiwi, and blueberries, always mixing each fruit with yogurt, honey, and lemon or lime juice. Pour each layer over the previous one once it is partially firm, freezing briefly between layers to ensure distinct and colorful bands.
  6. Insert sticks and solidify: Once all layers are added and partially firm, insert popsicle sticks carefully. Freeze the popsicles completely for at least 3 to 4 hours or until solid.
  7. Remove and serve: To unmold, run the outside of the popsicle mold briefly under warm water to loosen. Gently pull the popsicles out and serve immediately for a cool, refreshing treat.
