Description

Quick and Easy Taco Mac and Cheese is a delicious one-pot meal combining creamy elbow macaroni with seasoned ground beef, melted cheddar cheese, and classic taco flavors, making it a comforting dish perfect for a family dinner or busy weeknight.

Ingredients

Pasta

  • 12 oz elbow macaroni

Meat and Seasoning

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 packet taco seasoning (about 1 oz)

Liquids and Sauces

  • 1 cup beef broth
  • 1 cup salsa
  • ½ cup cream or milk

Cheese and Garnish

  • 2 cups shredded cheddar cheese
  • Chopped cilantro (optional)

Instructions

  1. Cook Macaroni: Bring a large pot of salted water to a boil, then add the elbow macaroni. Cook until al dente, about 8-9 minutes, then drain well and set aside.
  2. Brown Ground Beef: In a large skillet or saucepan, heat olive oil over medium-high heat. Add ground beef and cook, breaking it apart with a spatula, until fully browned and no longer pink, about 6-8 minutes. Drain excess fat to keep the dish from becoming greasy.
  3. Add Seasoning and Liquids: Stir in the taco seasoning packet, ensuring the beef is evenly coated. Pour in the beef broth and salsa, stirring well to combine. Let the mixture simmer gently for about 5 minutes so flavors meld together.
  4. Combine Pasta and Sauce: Add the cooked macaroni to the skillet with the beef mixture. Stir thoroughly to combine so the pasta is well coated with the sauce.
  5. Add Cream and Cheese: Lower the heat to medium-low and stir in the cream (or milk) followed by the shredded cheddar cheese. Continue stirring until the cheese is fully melted and the sauce is creamy and smooth.
  6. Garnish and Serve: Remove from heat. Sprinkle chopped cilantro over the top if using. Serve immediately while hot and gooey.

Notes

  • Add black beans or corn for extra texture and added nutrition.
  • Top with sour cream or diced avocado for a creamy contrast and richer flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently.
