Description
A classic fall dessert featuring a smooth and spiced pumpkin filling nestled in a flaky pie crust, traditionally served during Thanksgiving celebrations for a warm and comforting treat.
Ingredients
Pie Base
- 1 pie crust
Filling
- 1 3/4 cups pumpkin puree
- 3/4 cup sugar
- 2 eggs
- 1 cup heavy cream
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for the initial bake that sets the filling properly.
- Mix Filling: In a medium bowl, whisk together the pumpkin puree, sugar, eggs, and heavy cream until the mixture is smooth and well combined.
- Add Spices and Salt: Incorporate the cinnamon, ginger, nutmeg, and salt into the pumpkin mixture, stirring thoroughly to evenly distribute the flavors.
- Fill Crust: Pour the prepared filling evenly into the pie crust, smoothing the top gently with a spatula.
- Initial Bake: Bake the pie at 425°F (220°C) for 15 minutes to set the crust and start cooking the filling.
- Lower Temperature and Continue Baking: Reduce oven heat to 350°F (175°C) and continue baking for 35 to 40 minutes, or until the filling is set and a knife inserted near the center comes out clean.
- Cool: Remove the pie from the oven and allow it to cool completely on a wire rack before serving, which helps the filling to firm up perfectly.
Notes
- Serve with a dollop of whipped cream for extra creaminess and flavor.
- Avoid overbaking the pie to prevent cracks from forming on the surface.
