Instructions

  1. Cook Potatoes and Onion: In a pot, combine the peeled and diced potatoes and chopped onion with the chicken broth. Cook over medium heat until the potatoes are tender, about 10 to 15 minutes.
  2. Make Roux: In a separate pan, melt the butter. Whisk in the all-purpose flour to create a roux, cooking for about 1 to 2 minutes until it becomes slightly golden and fragrant.
  3. Add Dairy to Roux: Slowly pour in the milk and heavy cream while continuously whisking to avoid lumps. Continue whisking until the mixture thickens into a creamy sauce.
  4. Combine Mixtures: Pour the creamy roux mixture into the pot with the cooked potatoes and onions. Stir to combine evenly.
  5. Melt Cheese: Add the shredded cheddar cheese to the pot and stir until the cheese has completely melted and the soup is smooth.
  6. Add Bacon and Season: Stir in the crumbled bacon, then season the soup with salt and black pepper to taste.
  7. Adjust Texture: For a thicker texture, mash some of the potatoes gently with a spoon or potato masher; or leave the soup chunky if preferred.
