Description

Pesto Grilled Chicken is a simple yet delicious dinner featuring tender chicken breasts marinated in a vibrant basil pesto mixture with lemon, garlic, and Parmesan. Grilling imparts a smoky char that enhances the fresh, zesty flavors while keeping the chicken juicy and flavorful, making it an ideal recipe for quick weeknight meals or summer cookouts.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts

Marinade

  • ½ cup basil pesto
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • ¼ tsp black pepper

Toppings and Garnish

  • ¼ cup grated Parmesan cheese
  • Fresh basil, for garnish
  • Lemon wedges, for serving

Instructions

  1. Prepare the chicken: Place the chicken breasts between two pieces of plastic wrap and gently pound them to an even thickness to ensure uniform cooking.
  2. Make the marinade: In a bowl, mix together the basil pesto, olive oil, lemon juice, garlic, and black pepper until well combined.
  3. Marinate the chicken: Add the chicken to the pesto mixture, coating each piece thoroughly. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  4. Preheat the grill: Heat your grill to medium-high heat, approximately 400°F (200°C), preparing it to cook the chicken perfectly.
  5. Grill the chicken: Remove the chicken from the marinade and place it on the grill. Cook for 5–7 minutes per side, depending on thickness, until the internal temperature reaches 165°F (74°C).
  6. Add Parmesan: During the last minute of grilling, sprinkle the grated Parmesan cheese over the chicken to allow it to melt slightly.
  7. Rest the chicken: Remove the chicken from the grill and let it rest for 5 minutes to redistribute the juices and keep the meat tender.
  8. Garnish and serve: Top with fresh basil leaves and serve with lemon wedges to add bright, fresh acidity.

Notes

  • You can use homemade or good-quality store-bought basil pesto depending on preference and convenience.
  • If desired, substitute chicken thighs for breasts, but adjust grilling time to ensure thorough cooking.
  • Be careful not to overcook the chicken to maintain its juicy texture.
  • This dish pairs wonderfully with grilled vegetables, pasta, rice, or a simple green salad for a complete meal.
