Oven Roasted Yukon Gold Potatoes are a perfect side dish featuring potatoes that are crispy on the outside and fluffy on the inside. Potatoes

  • 2 lbs (900 g) Yukon Gold potatoes

Seasoning & Oil

  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Finishing Touches

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to ensure it reaches the right temperature for roasting the potatoes to a crispy finish.
  2. Prepare the potatoes: Wash the Yukon Gold potatoes thoroughly and cut them into 1-inch (2.5 cm) pieces for even roasting and texture.
  3. Toss the potatoes with seasoning: Place the cut potatoes in a large bowl. Add olive oil, minced garlic, dried rosemary, dried thyme, paprika, salt, and black pepper. Toss well to coat every piece evenly with the flavorful mixture.
  4. Arrange for roasting: Spread the seasoned potatoes out on a large baking sheet in a single layer. Make sure not to overcrowd the pan, which helps the potatoes roast evenly and get crispy.
  5. Roast the potatoes: Place the baking sheet in the oven and roast for 25 to 30 minutes. This initial roasting starts the cooking and browning process.
  6. Flip and continue roasting: After the first period, flip the potatoes to promote even crispiness on all sides. Roast for an additional 15 to 20 minutes or until the potatoes are golden brown and crispy to your liking.
