Description

These Mexican Street Tacos feature tender, seasoned flank or skirt steak grilled to perfection, served on warm corn tortillas with fresh chopped onions, cilantro, and lime wedges. This authentic recipe delivers bold flavors and a satisfying meal perfect for Taco Tuesday, family dinners, or casual gatherings.

Ingredients

Beef and Marinade

  • pounds flank steak or skirt steak
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Toppings and Serving

  • 12 small corn tortillas
  • 1 cup chopped white onion
  • ½ cup chopped fresh cilantro
  • Lime wedges, for serving

Instructions

  1. Prepare the marinade: In a small bowl, combine olive oil, chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix until well blended.
  2. Season the steak: Rub the prepared seasoning mixture evenly over both sides of the flank or skirt steak, ensuring the meat is fully coated for maximum flavor.
  3. Grill the steak: Preheat grill to medium-high heat. Place the seasoned steak on the grill and cook for 4 to 6 minutes per side depending on thickness, until it reaches your desired level of doneness.
  4. Rest and slice the meat: Remove steak from grill and let it rest on a cutting board for 5 to 10 minutes. This helps retain juices. Then slice the steak thinly against the grain into bite-sized strips.
  5. Warm tortillas: Warm the corn tortillas on the grill or in a dry skillet over medium heat for about 30 seconds per side until pliable and hot.
  6. Assemble tacos: Place sliced beef onto warmed tortillas. Top each taco generously with chopped white onion and fresh cilantro.
  7. Serve: Serve the tacos immediately with fresh lime wedges for squeezing over the top to add brightness and enhance the flavors.

Notes

  • Chicken or pork can be substituted for beef if preferred.
  • Add your favorite salsa or sliced avocado for additional flavor and creaminess.
  • Warm tortillas just before serving to maintain their soft texture and prevent drying out.
