Ingredients

- Juice of 1 lemon
Greens and Garnish
- 2 cups fresh spinach
- 2 tbsp chopped fresh parsley
Instructions
- Heat Olive Oil: Heat olive oil in a large pot over medium heat to prepare the base for the soup.

- Add Aromatics: Stir in minced garlic, dried oregano, and dried thyme, cooking for about 30 seconds until the garlic is fragrant but not browned.
- Add Beans and Broth: Pour in the drained white beans and vegetable broth, then bring the mixture to a boil over medium-high heat.
- Simmer Soup: Reduce heat to low and let the soup simmer gently for 20 minutes to meld the flavors.
- Blend Portion (Optional): For a creamier texture, remove a portion of the soup and blend it until smooth, then stir back into the pot.
- Add Spinach: Stir fresh spinach into the soup and cook until wilted, about 2 minutes.
- Finish with Lemon and Parsley: Add the lemon juice and chopped fresh parsley, stirring to incorporate the bright, fresh flavors.
- Season and Serve: Adjust salt and black pepper to taste, then serve the soup warm for a comforting meal.
