Ingredients
Puff Pastry Base
- 1 sheet puff pastry, thawed
Filling
- 1 cup fresh spinach, finely chopped
- ¾ cup crumbled feta cheese
- 1 clove garlic, minced
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh parsley, chopped
Finishing
- 1 egg, beaten
- 1 tbsp olive oil
- Sesame seeds (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the crisps.
- Sauté Spinach: Heat 1 tablespoon of olive oil in a skillet over medium heat and sauté the finely chopped spinach for 1–2 minutes until just wilted. Remove from heat and let it cool to room temperature.
- Prepare Filling: In a mixing bowl, combine the cooled spinach, crumbled feta cheese, minced garlic, chopped fresh dill, and parsley. Mix well to blend all the flavors.
- Shape Pastry: Roll out the thawed puff pastry sheet on a lightly floured surface. Cut it into 12 equal squares using a sharp knife or pizza cutter.
- Fill Pastry: Spoon a small amount of the spinach and feta filling into the center of each pastry square, distributing evenly among them.
- Seal Edges: Fold each pastry square over the filling to form a parcel and press the edges with a fork to seal tightly, preventing the filling from leaking during baking.
- Apply Egg Wash: Brush the top of each sealed pastry square with the beaten egg to promote a golden brown color when baked. Sprinkle sesame seeds on top if desired for added texture and flavor.
- Bake Crisps: Place the prepared squares onto a baking sheet lined with parchment paper. Bake in the preheated oven for 15–18 minutes, or until the pastries are puffed up and golden brown.
- Cool and Serve: Remove from the oven and allow the crisps to cool slightly before serving. Enjoy them warm for the best taste.
