Description

Marry Me Beans are a creamy, savory dish bursting with flavors from sun-dried tomatoes, garlic, Parmesan cheese, and Italian herbs. This one-skillet meal features tender cannellini beans simmered in a luscious creamy sauce, enhanced with fresh spinach and aromatic herbs. Perfect as a comforting vegetarian main or a delicious side, it comes together quickly on the stovetop for an easy yet impressive Italian-inspired meal.

Ingredients

Beans and Vegetables

  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach

Seasonings and Herbs

  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ¼ tsp red pepper flakes, optional
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh basil or parsley, chopped

Liquids and Dairy

  • 1 tbsp olive oil
  • 1 cup vegetable broth
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tbsp lemon juice

Instructions

  1. Heat the olive oil: Pour 1 tablespoon of olive oil into a large skillet and warm it over medium heat until shimmering.
  2. Sauté garlic and sun-dried tomatoes: Add the minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 to 2 minutes until fragrant, stirring occasionally to prevent burning.
  3. Add seasonings: Sprinkle in 1 teaspoon Italian seasoning, ½ teaspoon smoked paprika, and an optional ¼ teaspoon red pepper flakes. Stir well to combine flavors evenly.
  4. Simmer beans and broth: Add the drained cannellini beans along with 1 cup vegetable broth. Bring the mixture to a gentle simmer and cook for 4 to 5 minutes to allow the beans to absorb the flavors.
  5. Create creamy sauce: Stir in ½ cup heavy cream and ½ cup grated Parmesan cheese. Continue simmering for another 3 to 4 minutes, stirring occasionally, until the sauce thickens and becomes creamy.
  6. Wilt spinach: Add 2 cups fresh spinach to the skillet and cook for 1 to 2 minutes until wilted, stirring gently to mix it into the sauce.
  7. Season with lemon and spices: Stir in 1 tablespoon lemon juice, then season with ¼ teaspoon salt and ¼ teaspoon black pepper to taste.
  8. Garnish and serve: Remove from heat. Garnish with 2 tablespoons chopped fresh basil or parsley and extra Parmesan if desired. Serve warm alongside crusty bread, rice, or pasta for a complete meal.

Notes

  • Mash a small portion of the beans against the skillet sides to naturally thicken the sauce for a creamier texture.
  • For a dairy-free version, substitute the heavy cream with unsweetened plant-based cream and replace Parmesan with nutritional yeast.
  • Add extra vegetables such as mushrooms, kale, or artichoke hearts to boost nutrition and flavor variety.
  • Great northern beans or other white beans can be used as a substitute for cannellini beans with similar results.
  • To increase protein, serve with grilled chicken or stir in cooked Italian sausage while simmering.
