Ingredients

Marinated Tomatoes

  • 3 large ripe tomatoes, sliced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh basil, chopped

  • 1/2 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Sandwiches

  • 8 slices sourdough or country bread
  • 8 slices bacon
  • 4 lettuce leaves
  • 1/3 cup mayonnaise
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • Black pepper, to taste


Instructions

  1. Prepare the tomatoes: Place the sliced tomatoes in a shallow dish to create an even layer for marinating.
  2. Make the marinade: Whisk together olive oil, balsamic vinegar, fresh basil, minced garlic, honey, salt, and black pepper until fully combined.
  3. Marinate the tomatoes: Pour the marinade over the tomato slices and gently turn them to coat evenly. Let them sit for 20–30 minutes to absorb the flavors.
  4. Cook the bacon: While the tomatoes marinate, cook the bacon slices in a skillet over medium heat until they are crispy. Once done, transfer to paper towels to drain excess fat.
  5. Toast the bread: Toast the sourdough or country bread slices until they develop a light golden color and a slight crunch.
  6. Prepare the seasoned mayonnaise: Combine mayonnaise with lemon juice, garlic powder, and a pinch of black pepper in a small bowl, stirring well.
  7. Assemble the sandwiches: Spread the seasoned mayonnaise over one side of each toast slice. On four slices, layer lettuce leaves, marinated tomato slices (drained slightly to prevent sogginess), and crispy bacon.
  8. Finish and serve: Top each sandwich with the remaining slices of bread, mayonnaise side down. Gently press together, slice in half, and serve immediately for best texture and flavor.
