Ingredients
Chicken:
- 2 lbs (900 g) bone-in, skin-on chicken thighs
Vegetables:
- 2 medium sweet potatoes, peeled and cubed
Glaze and Seasonings:
- 2 tbsp olive oil
- 3 tbsp pure maple syrup
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp chopped fresh parsley, for garnish
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the chicken and sweet potatoes.
- Prepare Maple Glaze: In a small bowl, whisk together the pure maple syrup, Dijon mustard, minced garlic, dried thyme, salt, and black pepper until well combined for a sweet-savory glaze.
- Arrange Ingredients: Place the chicken thighs and cubed sweet potatoes on a large baking sheet or roasting pan evenly.
- Coat Sweet Potatoes: Drizzle the olive oil over the sweet potatoes and toss them gently to coat well, ensuring they roast nicely.
- Glaze Chicken and Sweet Potatoes: Brush the maple glaze mixture evenly over the chicken thighs, then drizzle any remaining glaze over the sweet potatoes for flavor infusion.
- Roast: Roast the chicken and sweet potatoes in the preheated oven for 35–40 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the sweet potatoes are tender when pierced with a fork.
- Garnish and Serve: Remove from oven and sprinkle chopped fresh parsley over the dish before serving to add brightness and freshness.
Notes
- Add Brussels sprouts or carrots along with the sweet potatoes for extra vegetables and variety.
- For crispier chicken skin, switch the oven to broil and broil the chicken for 2–3 minutes at the end of cooking, watching closely to avoid burning.
- You can use boneless chicken thighs instead of bone-in; reduce cooking time slightly to prevent overcooking.
