Ingredients

Chicken

  • 1½ pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 garlic cloves, minced
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste

Bowl

  • 4 cups cooked rice
  • 2 cups diced cucumber
  • 1 cup cherry tomatoes, halved
  • ¼ cup diced red onion
  • 2 tablespoons chopped parsley

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste

Instructions

  1. Prepare the marinade: In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, chili powder, smoked paprika, dried oregano, salt, and black pepper until well combined to create the flavorful marinade for the chicken.
  2. Marinate the chicken: Place the chicken breasts in a shallow dish or resealable bag and pour the marinade over them, making sure the chicken is fully coated. Refrigerate and marinate for at least 30 minutes to allow the flavors to penetrate the meat.
  3. Grill the chicken: Preheat the grill to medium-high heat. Remove chicken from the marinade and grill for 6–7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through with nice grill marks.
  4. Rest and slice the chicken: Remove the chicken from the grill and let it rest for 5 minutes to retain its juices. Then, slice the chicken into strips or bite-sized pieces for serving.
  5. Make the cucumber salad: In a mixing bowl, combine diced cucumber, halved cherry tomatoes, diced red onion, chopped parsley, olive oil, lemon juice, salt, and black pepper. Toss gently to mix all ingredients and coat the vegetables evenly with the dressing.
  6. Assemble the bowls: Divide the cooked rice evenly among four bowls. Top each bowl with sliced grilled chicken and a generous scoop of the fresh cucumber salad. Garnish with lemon wedges if desired for an extra citrusy burst.
  7. Serve and enjoy: Serve the Lemon Chili Grilled Chicken Bowls immediately as a wholesome, balanced meal packed with bright, bold flavors.
